Homegrown Fresh Tomato Sauce

FreshTomato Sauce


Note: As always, the better quality ingredients used, the better your sauce will come out.  Use a red wine that you would want to drink, not just a “cooking wine”, organic produce tends to have more taste, olive oil helps round out the flavor so don’t skimp.


5 lbs Fresh Tomatoes (preferably Roma)

4 cloves garlic

2 carrots

2 celery stalks

1 onion

½ C olive oil*

3T tomato paste

1C red wine

Salt & Pepper

*add more as needed.



  1. Peel and seed tomatoes. Save the juice and flesh separately.
  2. Chop garlic very fine.
  3. Add garlic and 2T olive oil to a large pot on stove over low flame until fragrant (about 5 minutes).
  4. Put onions, carrots and celery in food processor. Chop it very fine but not mushy.
  5. Add onion, carrot, celery mixture to garlic. Add remaining olive oil. Cook over low flame until soft (about 15 minutes).
  6. Add chopped fresh tomatoes, tomato sauce, salt and pepper. Mix well.
  7. Add wine and tomato paste. Mix well.
  8. Bring to a boil and then lower heat to low.
  9. Simmer sauce 5 hours un-covered, mixing about every 30 minutes.
  10. Enjoy some with your choice of pasta.
  11. Cool and save the rest in a sanitized jar.


Yield: Makes 2 quarts.
